Teriyaki Tofu Tacos & Pico de Gallo

Healthy eating can be short, sweet and good for you. A little vegetarian, garlic-ginger twist on a Spanish-speaking favorite turned out pretty tasty – and all very fresh, healthy ingredients. It took about 30 minutes to prepare. The taste: sweet and spicy explosions with a sharp crunch. If you have shredded cabbage, you could experiment with other flavors.

How to prep the tofu:

Cut up 1 package of firm tofu and marinate for 15 minutes in a couple of tablespoons of safflower oil, 1 teaspoon of freshly grated ginger, 1 large clove of garlic and 3 tablespoons of Teriyaki sauce.

Pico de Gallo:

While tofu marinates, finely dice 1 medium tomato, a handful of fresh cilantro, the juice of 1 lemon, 1 small onion and 1 jalapeno pepper. Mix up and add salt and pepper to taste

Finally, stir fry the tofu mixture for 15 minutes on medium high heat. Garnish with extra cilantro and serve on corn tortillas with pico de gallo, shredded monterrey jack and fresh slices of pickling cucumbers.
